Boned Salted Codfish
Directions to prepare for cooking, freshen the fish as follows: Wash fish for 15 minutes in running water. Place fish in pan and cover with water. Heat slowly (Do Not Boil) and pour off water. Repeat this last process until fish is no longer too salty to taste.
Preparation Instructions: In refrigerator soak 1 lb (454 g) of salt fish in 6 cups (1.5 l) of fresh water for 24 hours. Change water three times. Parboil fish in 6 cups (1.5 l ) fresh water for 7 to 10 minutes. Drain.
